Chicken nuggets can sometimes seem like a separate food group to children. They can be baked or fried, but the flour coating is too high in carbs for a keto diet.

For a crunchy nugget that rivals regular nuggets, the nuggets have been coated with almond flour and pork skins. Although this recipe is not easy, it’s well worth the effort for little ones and older children.

What ingredients are needed to make keto chicken nuggets

Ground chicken – I prefer ground chicken thigh to chicken breasts because it is fattier and has more flavor. However, you can adjust according to your tastes and what you have. Ground chicken is a great protein option for low-carb recipes. For a quick keto meal, check out my chicken crust pizza! You can also use ground chicken from the grocery store by placing boneless, skinless chicken legs in your food processor. Pulse the mixture until you get the desired consistency. Ask your butcher to make fresh ground chicken for you! Grated Parmesan cheese – This is the stuff you’ll find in that green plastic container at the grocery store. This works great for keto breading, just like this keto air fryer fried Chicken! Shredded cheddar cheese – If time permits, you can shred the cheese right off the block. It tastes better, and doesn’t contain any fillers that can cause pre-shredded cheese not to stick together. Almond Flour: I prefer to use a blanched, finely milled almond flour such as Blue Diamond. For a number of years, this has been my favourite brand. Egg – This recipe calls for one large egg. Pork Rinds: The pork rinds make up the breading, so it’s important to crush them very finely. Simply put them in your food processor, and it will do the rest!

Ingredients

Ground chicken thigh 1 lb. 1/4 cup grated Parmesan cheese 1/2 c. shredded cheddar cheese 1 egg 1 oz finely ground pork.

Instructions

Preheat oven to 350°F. Line two baking pans with parchment paper. Mix the egg in a separate bowl. Place the pork rinds in a separate bowl. Dip a nugget in the egg. To remove any excess liquid, shake the nugget and then press it into almond flour. To coat the nuggets evenly, dip it in the egg again. Bake for 25 minutes, or until the outside turns golden brown and the internal temperature reaches 165 degrees F. Serve warm with your favorite dipping sauce.
