This delicious low carb barbecue ranch chicken casserole is the answer to your dilemma!

Now that school is back in session for most of us I feel like we are back to the ‘Oh Crap we forgot to plan what we are eating tonight’

So with all that going on again, most days I really need something that is quick and easy. This chicken casserole fits the bill!

Pretty much right up there with our Keto Chicken Enchilada Casserole and Cashew Chicken Wraps… we need quick and something the entire family can enjoy.

The Basics We Always Have in the Freezer in a Low Carb Diet

I looked in my freezer to see what I had and it basically came down to chicken and cauliflower.

It truly seems to be a normal on what we store in the freezer. Family loves chicken and I personally prefer frozen riced cauliflower for the exact reason of sweet sweet convenience.

I can highly recommend keeping these ingredients in the freezer at all times because you can make things like, Chicken Enchilada Breakfast Casserole, Mexican Cauliflower Rice oh and this Cheddar Broccoli Chicken Casserole.

Our main priorities for dinners these days are fast, easy, have minimal ingredients. In fact, it took me all of 5 minutes to get it all into the casserole dish.

Low Carb Barbecue Sauce Options

We personally have a jar of sugar-free barbecue sauce in the refrigerator at all times.

But if you aren’t comfortable with buying your sauce, feel free to make your own like we did here. The main thing is to end up with 1 cup of it for the recipe.

Also, if you avoid the ranch packets at the grocery store for whatever reason like I do, it’s easy enough to make your own. You can find that recipe on my other blog here. I personally think they are just expensive and it’s so much easier to have a jar of this mix already together for quick nights like this.

Ingredients

1/4cupoil1lb.chicken breasts(frozen, boneless, skinless)1(12 oz.) packagericed cauliflower(frozen is best, but not required)1cuplow carb barbecue sauce3tbsp.dry ranch mix(see recipe link)3medium tomatoes, chopped1 1/2cupshredded monterey jack cheesefresh parsley for garnishUS Customary – Metric

Instructions

Preheat oven to 375 F.
Pour the oil into your casserole dish. It must be large enough to allow the chicken to be laid down in a single layer.
Add the chicken, top with the cauliflower, ranch mix, roma tomatoes and finally top with the barbecue sauce.
Bake for 25 minutes or until the chicken reaches at least 165 F. on a meat thermometer. Top with shredded cheese and pop back into the oven for another 5-10 minutes, or until cheese is melted.
Cool slightly and serve immediately.
