How can you make cheesecake-stuffed strawberries?
Use a hand mixer to whip cream cheese in a large bowl until it is fluffy and on medium speed, approximately 2 minutes. It won’t whip as well if it’s too cold. It can be whipped and left at room temperature for about 15 minutes. Once it is softened, add the vanilla, erythritol and lemon juice to a mixing bowl. Whip until smooth and well-combined, approximately 2-3 minutes.
Use a knife to carefully remove the strawberry tops and leave the middle intact.
Use a 1M tip to pipe the cheesecake mixture. Fill a gallon ziplock with the cheesecake mixture and cut one corner with scissors. You can also use a spoon, but it may get messy.
Fill each strawberry with the mixture until it is full. Garnish with low-carb chocolate chips, chocolate drizzle, or toasted almond flour. Allow cheesecake to set in the refrigerator for 45 minutes to an hour.
