This is a great substitute for traditional pumpkin pie. Place all crust ingredients in a medium bowl. Use a pastry/dough knife to cut butter and egg into flour and cinnamon. Once the mixture is small enough to resemble pebbles, add in sweetener. Place the crust mixture in a pie plate 9 to 10 inches or 2 tart pans 6 inches. Bake for 8-10 minutes. Remove from oven and let cool. Fill a pie pan or dish with the filling. Bake at 350 degrees for 15 minutes. Reduce heat to 350 degrees and bake another 15 minutes. Turn heat down to 325 degrees, and bake another 20-30 minutes or until a knife inserted in the center comes out clean. Allow to cool for 2 hours. Cool again and then let cool at room temperature for 2 hours. If desired, top with vanilla ice cream or whipped cream.
