Can you add scrambled eggs to this casserole?
Although this recipe is not tested with extra scrambled eggs it should still work. You can add scrambled eggs to this recipe by whisking 6 eggs with 1/4 cup half-n-half and then pouring it over the sausage. The eggs may take a few extra minutes to set properly in the oven. Keep an eye on them.
Can this casserole be made into muffins?
You can make the recipe into muffins if you want to grab and go breakfast. You can use a muffin pan that is 12 cups or mini muffin pan that is 24 cups. Check for doneness at the 12 minute mark. Look out for slightly raised and golden tops.
This casserole can be made at night and baked in the morning.
This recipe is not suitable for use as an overnight meal. Because the pancake batter doesn’t like the fridge after the leavening agents (baking soda and powder) have been added, I wouldn’t recommend prepping the casserole before baking.

You can freeze individual slices of this casserole, and then reheat them as you wish. To prevent freezer burn, I recommend freezing individual slices in plastic wrap wrapped in ziplock bags. For reheating, remove the wrap from a slice and place it on a plate that is microwave-safe. Heat for 45 to 50 seconds. Cook for 10 seconds if you need more time.

Ingredients
1 pound breakfast sausage 1.5 cups almond flour 1.5 teaspoons baking Powder pinch of Salt 1 tablespoon brown sugar monkfruit 2 eggs 1/2 teaspoon vanilla Extract 8 tablespoons butter, melted 3 teaspoons sugar-free maple syrup
Instructions
Pre-heat oven to 350°F Prepare a casserole dish 8×12 or 9×13 and grease it. As you cook, crumble the sausage with a wooden spoon. Drain the grease. Set aside. Blend all ingredients in a blender or food processor until smooth. Transfer the pancake batter to your prepared casserole dish. Make sure you scrape the batter from the sides and blade. Add the cooked sausage to the pancake batter. Sprinkle evenly. Use the back end of a wooden spoon to gently press the sausage into batter. Bake for 20-25 minutes. Let cool for 5-10 minutes before you slice.
