Although this recipe is not tested with extra scrambled eggs it should still work. You can add scrambled eggs to this recipe by whisking 6 eggs with 1/4 cup half-n-half and then pouring it over the sausage. The eggs may take a few extra minutes to set properly in the oven. Keep an eye on them.

This casserole can be made at night and baked in the morning.
This recipe is not suitable for use as an overnight meal. Because the pancake batter doesn’t like the fridge after the leavening agents (baking soda and powder) have been added, I wouldn’t recommend prepping the casserole before baking.
What kind of sausage is Keto-friendly?
Most sausages can be used in a ketogenic diet, provided they are not sugary. Look for sausages that are nitrate- and nitrate-free whenever possible. Avoid breakfast sausages labeled “maple” and “sweet”, as these will contain added sugars. This keto breakfast casserole recipe works well with any kind of breakfast sausage, whether it’s hot or cold.
What kind of syrup is keto-friendly?
Sugar-free products like syrups have become increasingly popular due to the popularity of low carb diets and sugar-free lifestyles. Many syrups are sweetened with artificial sweeteners or maltitol (iykyk). ChocZero is my favorite keto syrup. They contain only 1 net carb per teaspoon and are dairy, gluten, and soy-free. Can this gluten-free casserole be frozen and reheated?
You can freeze individual slices of this casserole, and then reheat them as you wish. To prevent freezer burn, I recommend freezing individual slices in plastic wrap wrapped in ziplock bags. For reheating, remove the wrap from a slice and place it on a plate that is microwave-safe. Heat for 45 to 50 seconds. Cook for 10 seconds if you need more time.
