PS: This recipe was originally posted in 2014. It was when I was on a low-carb diet. I came across it while trying to get rid of redundant posts. This was a simple, easy recipe that you can make in your microwave.

Low Carb Green Chips Recipe

Low carb forums were full of Kale chips and I tried to find them everywhere in India. Then I proved to myself once more that I’m very adept at managing and switching things my own way. Here’s what I made for my snack while watching my favorite shows, ‘The Walking Dead’ & ‘Revenge. (Who needs high-carb popcorn and chips! ;D
These green chips are usually made with Kohlrabi leaves, but I have also made them with Cauliflower greens many times.

What is Kohlrabi?

Kohlrabi, also known as Kashmiri Kadam or Ganth Gobhi, is a great source of nutrition. The greens contain nearly half of the daily Vitamin A value and 20% of Vitamin C in one serving. Because it contains many anti-oxidants, it protects against prostate and colon cancer.
This vegetable is rich in vitamins and minerals, including potassium, calcium, iron, manganese, copper, and phosphorus. Kohlrabi’s high potassium content makes it useful in keeping your blood alkalinity, which can help with many other ailments.

Kohlrabi has many health benefits

The high levels of anti-oxidant, potassium, and phosphorus in kohlrabi juice help to fight asthma, lung problems and cancer. After cardio exercises, kohlrabi juice can be consumed to reduce the risk of developing heart problems. Kohlrabi is a great way to lose weight as it inhibits the conversion sugar and other carbs into fat.

Kohlrabi greens can be washed well with running water. Pat dry. You can chop the leaves, but you should leave them as is.

Split leaves into two pieces and place in the microwave. Microwave on high for 10 minutes. The time depends on the microwave’s power. The leaves shouldn’t burn, but they should be dry and crisp. The leaves should not catch fire in the first batch. As the next batches are made, you’ll be able to gauge the time.
When your green chips are crisp, heat them in the microwave and then sprinkle some chat masala over them. Allow them to cool. Enjoy your crispy green chips by turning on your favorite TV program or movie.
These can be served with low-carb vegetarian Mayonnaise or strawberries

These chips are low in carbs and high in fiber. You can make these chips and then store them in a dry container. Ah! Oh!
